Plum Wine (Umeshu)

A delicious alcohol drink starring the Ume fruit.

  • 850 g Ume, unripe
  • 715 g Rock Sugar
  • 1.6 L Alcohol

  1. Add ume and rock sugar to the bottle. Layer them on top of each other with a layer of ume, then a layer of sugar, and keep going until there is no more fruit to add.
  2. Fill bottle with alcohol (about 35% ABV; vodka, rum, or brandy are commonly used). Try not to let any fruit be exposed to the air in the bottle.
